It is highly likely that your "hangover" symptoms are connected to the salami, but sodium nitrate itself may only be part of the reason. [1] Eating a large amount of cured meat can trigger a cluster of symptoms—like a throbbing headache, dry mouth, bloating, and fatigue—that perfectly mimic an alcohol hangover. The culprit is usually a combination of three distinct factors: [2, 3]

1. The "Nitrate Headache"

When you consume sodium nitrate, your body converts it into nitric oxide. Nitric oxide causes your blood vessels to dilate (widen). For many people, this sudden widening of blood vessels in the brain can trigger a vascular headache or a severe migraine. [1, 4, 5, 6]

2. A "Salt Hangover" (Dehydration)

Salami is packed with massive amounts of sodium. When you eat a lot of salt, it pulls water out of your body's cells and into your bloodstream to balance things out, causing acute dehydration. This leads directly to a dry mouth, a sluggish feeling, and a classic dehydration headache. [3, 7, 8]

3. Tyramine Sensitivity

Salami is a fermented, aged meat. During the aging process, an amino acid called tyramine builds up. Tyramine is a notorious, well-documented trigger for headaches, facial flushing, and heart palpitations, especially if your body processes it slowly. [6, 9]

How to Fix It Right Now

1. Recombinant EGF (Epidermal Growth Factor)

To understand this, we have to split the name in two: "Recombinant" and "EGF."

What is EGF? EGF is a protein that naturally exists in your body. Think of it as a "Growth Switch." When your skin is injured or aging, EGF flips a switch that tells your skin cells: "Stop resting and start dividing! We need more cells here to repair the damage." It speeds up wound healing and makes the skin thicker and smoother.

What does "Recombinant" mean? In the past, if you wanted EGF, you had to extract it from biological sources (like animal tissues). Recombinant technology is a way to "grow" the protein in a lab without using animals.
