It is highly likely that your "hangover" symptoms are connected to the salami, but sodium nitrate itself may only be part of the reason. [1]
Eating a large amount of cured meat can trigger a cluster of symptoms—like a throbbing headache, dry mouth, bloating, and fatigue—that perfectly mimic an alcohol hangover. The culprit is usually a combination of three distinct factors: [2, 3]
1. The "Nitrate Headache"
When you consume sodium nitrate, your body converts it into nitric oxide. Nitric oxide causes your blood vessels to dilate (widen). For many people, this sudden widening of blood vessels in the brain can trigger a vascular headache or a severe migraine. [1, 4, 5, 6]
2. A "Salt Hangover" (Dehydration)
Salami is packed with massive amounts of sodium. When you eat a lot of salt, it pulls water out of your body's cells and into your bloodstream to balance things out, causing acute dehydration. This leads directly to a dry mouth, a sluggish feeling, and a classic dehydration headache. [3, 7, 8]
3. Tyramine Sensitivity
Salami is a fermented, aged meat. During the aging process, an amino acid called tyramine builds up. Tyramine is a notorious, well-documented trigger for headaches, facial flushing, and heart palpitations, especially if your body processes it slowly. [6, 9]
